Zucchini Boats

Ingredients:
4 medium-sized zucchinis - 132 calories
1 pound ground turkey breast - 480 calories
1/2 cup chopped bell peppers - 20 calories
1/2 cup chopped onions - 35 calories
1/2 cup sliced mushrooms - 8 calories
2 cloves garlic, minced - 9 calories
1 tablespoon tomato paste (Omit if you experience reflux or heartburn with tomatoes) - 15 calories
1 teaspoon dried basil - 1 calories
1/2 teaspoon salt - 0 calories
1/4 teaspoon black pepper - 2 calories
Fresh parsley for garnish (optional)

Instructions:
First, preheat your oven to 375°F.
Wash the zucchinis. Using a spoon, scoop out some of the flesh from each zucchini. Set aside the scooped-out flesh for another use, like making zucchini noodles or adding it to a salad.
In a large pan, cook the ground turkey over medium heat until it's browned and cooked through. Break up any large pieces of turkey.
Add the chopped bell peppers, onions, and mushrooms to the pan with the cooked turkey. Cook everything together for about 5 minutes, stirring occasionally, until the veggies are softened.
Add the minced garlic, basil, salt, and black pepper, and tomato paste to the pan, cooking for an additional minute, stirring constantly.
Without burning yourself, carefully fill each hollowed-out zucchini boat with the filling using a spoon.
Place the filled zucchini boats onto a baking sheet lined with parchment paper.
Bake them in the preheated oven for about 20-25 minutes, or until the zucchinis are tender.
Remove from the oven and let them cool for a few minutes before serving. Garnish with parsley (optional)
