Ingredients:

1 cup of dried lentils - 680 calories

2 cups of vegetable broth - 35 calories

1 medium onion, chopped - 45 calories

2 cloves of garlic, minced - 9 calories

1 carrot, peeled and sliced - 25 calories

1 celery stalk, sliced - 6 calories

14 oz of diced tomatoes (Replace with additional broth if you experience reflux or heartburn with tomatoes) - 128 calories

1 teaspoon of thyme - 1 calories

1 teaspoon of fresh parsley - 1 calories

Salt, pepper, and red pepper flakes to taste

Optional: Unsweetened low-fat Greek yogurt, green olives, mushrooms - Calories vary
